Here's an awesome refreshing drink to fight the exhausting summer heat that has visited Seattle last weekend and apparently decided to stay here for a while.
It's a Peruvian concotion featuring lime juice and Peruvian brandy called Pisco. Trader Joes currently sells a very good Pisco (called Pisco of the Gods), reasonable in price and great in flavor.
For one glass of Pisco Sour you will need:
- 3.5 oz Pisco
- 1.5 oz freshly squeezed lime juice
- 1 oz simple syrup (which is sugar dissolved in boiling water and then thoroughly chilled; my ratio of sugar to water is 1:2)
- 1 egg white (don't skip it, I beg of you; it creates this amazing fluffy foam on top of the drink)
- 3-4 large ice cubes (or 6 small)
- a dash of angostura bitters
Put the first 4 ingredients into a shaker and shake it vigirously for 20-30 seconds. Open the shaker and carefully pour the drink into a serving glass. If all of the foam doesn't want to come out, spoon it out and place on top of the drink. Sprinkle the top lightly with angostura bitters - 3-4 drops are quite enough - and serve right away.
This cocktail is a real fire extinguisher. I've just made myself one and feel how the heat pulls away with every sip.
